Hydra does not have one “famous” dish that sets it apart from other Greek destinations.
You can find traditional dishes at most tavernas, and indeed, local seafood is a significant player. Many of the restaurants do their fishing in the morning using their boat.
Therefore, there is not one taste Hydra offers. There are hundreds. Throw in the setting. Many are by or within view of the water. And there’s the friendly hospitality of the local people. It would be hard to have a bad meal on Hydra.
Taste Hydra.
A great way to taste Hydra is to do a progressive meal. I often start with sundowners and meze in Kamini.
Stop for another small plate somewhere along the walk back to Hydra. I usually sit at the bar for this.
Then have my entree somewhere in town.
Another option is to walk to the top of the town and work your way back to the port. It sure beats walking uphill after dinner.
If you only have a short time on the island, this will give you several experiences. I seem to have dinner guests wherever I go. I always travel with a ziplock bag of local cat food and one with dog treats from the local market.

Taste Hydra Hospitality
Although you cannot bottle it and sell it in a spice store, the local hospitality makes a meal taste better.
Once the day-tourists go away and the island calms down, it shows. It almost borders on too much service as they check to make sure you have everything you need.
I am not saying it is fast service. On Hydra, you don’t want anything to go fast.
The hospitality blends right into this pace.
